I tried several sprinkles for this version and the rainbow sprinkles work best. They’re bright, tube-shaped and don’t leave streaks of color in the batter, which means the final pancake looks just as good.
Non-prills, or small round sprinkles, give off color quickly and the smaller shape didn’t remind me of the funfetti Paradise Rainbow sprinkles. Natural rainbow sprinkles aren’t as bright or sweet and the tried-and-true ones aren’t as vibrant in color as Betty Crowe, but the trade-off is fine with you if you have rainbows in your pantry, too. I do my best to keep a stock of buttermilk in my fridge but sometimes it slips my mind and is left as a last minute substitute. In that case, I turn to you, usually combined with a lemon russell because I have a lemon in the refrigerator that I need to use the room’s computers.

Use low heat:
Funfetti Pancakes are similar to any other buttermilk pancake corner. The main difference is that we want the pancakes to look like sprinkles filled with color in the color of the hull. This requires cooking on low heat for a long time. Heat a non-stick skillet, or well-seasoned cast iron, on the grill. I’m a big fan of electric griddles so if you’re using one of those, set it to 325°F.
Know when they’re done: Pancakes take 2 to 3 minutes per side to cook. Watch the edges of the pancake for puffiness and dryness and for bubbles in the center. Flip and cook for another 2 minutes until the center of the pancake is split and the other side is golden brown. Check by sticking the edge of a flexible spatula to the bottom of the pancake. If it comes out clean, you know it’s packet air.
With heat settings: Adjust the heat as needed, because the longer the pans turn on, the hotter they are.

I’m not at my best in the morning so I can’t get up sometime before breakfast either. I make a batch of pancakes the night before and keep them in the fridge for an easy weekday breakfast. If I’m feeling adventurous, I make a double batch and freeze half once cooled. You can defrost for about 20 hours in Golive.
You can also put the dry ingredients in a resealable bag. I do this when we are staying at home on vacation and want to make pancakes easily enough to pack all the ingredients.
Unfortunately, one thing you can’t do is make the dough and then you can get something. Fermenters don’t stay and the color of the spray is weepy, which means you have a sad pack for breakfast.
